THE ART OF DINING


Extraordinary 3 Michelin Star Chef Alain Passard returns to The Sukhothai Bangkok with degustation dishes from his awe-inspiring innovations in French cuisine. In all the years of his expertise, the uniquely delicious characteristics he now reveals are the best yet.

Brittany-born Alain Passard was stirred by his grandmother's cooking at an early age and began his career at Le Lion d'Or of Liffré under Michel Kéréver. At 26 years of age, Alain Passard obtained two Michelin Stars at Le Duc d'Enghien in the Enghien Casino and went on to receive two Michelin Stars for the second time at Carlton of Brussels in 1984.

In 1986, Alain Passard opened his own restaurant, Arpège, formerly L'Archestrate originally owned by his mentor, Alain Senderens. It earned one star in the Michelin Guide in its first year, and two soon thereafter. It earned three Michelin Stars in 1996, which it has maintained since.

"Khao Chae" The Summer Delicacy

Whenever April approaches in Thailand, we can expect the month to come with the yearly traditions of the Songkran festival and the hot summer weather at its peak. This month also brings along its celebratory vibes, and included among all the highlights that are part of this season is a unique Thai dish: Khao Chae.

"Khao" means rice and "Chae" means to soak in water, which is the heart of the recipe and defines its memorable character. The rice is served in chilled jasmine scented water, a truly distinctive innovation. It is served along with more than five condiments, and with this many small dishes displayed in front of you all at once, it can get a little confusing on where to start, especially for first timers. Eating Khao Chae isn't just simply picking anything at random and enjoying it as you please; rather, it is advised that you follow certain traditional rules, in order to completely experience the variety of taste in this dish, and not to mix the condiments in your rice bowl as this will spoil the unique taste and scent of the rice soaked in jasmine water. But won't worry about a thing, as our top-notch service team at Celadon will be on hand to give you professional advice and ensure that you enjoy this once a year special Thai dish.
